Made with Bob’s Red Mill Gluten-Free Pizza Crust Mix, this pizza is loaded with lean protein from chicken, nutrient-packed spinach, and finished with Viola dairy-free cheese and Mezzetta’s spicy marinara. It has quickly become a staple in our home. Even better? It’s simple enough for a weeknight dinner and delicious enough for a family pizza night.

Ingredients (1 × 12-inch pizza, ~8 slices)
226 g Bob’s Red Mill Gluten-Free Pizza Crust Mix (½ package)
4 g yeast (½ packet, included)
120 g warm water (~½ cup)
17 g olive oil (~1½ tbsp)
1 large egg (~50 g)
140 g cooked chicken breast (~1 cup, shredded)
112 g Viola dairy-free mozzarella (~1 cup)
30 g fresh spinach (~1 cup loosely packed)
70 g tomato slices (½–1 medium tomato)
120 g Mezzetta Spicy Marinara (~½ cup)
1 tsp Italian seasoning
Step-by-Step Instructions
Preheat your oven to 425°F (220°C).
Prepare the dough according to package directions, using half of the mix for one crust.
Shape the dough into a 12-inch round and par-bake for 7–9 minutes.
Spread marinara sauce evenly over the crust.
Layer half of the cheese, followed by chicken, spinach, and tomatoes.
Add the remaining cheese and sprinkle Italian seasoning on top.
Bake for 15–18 minutes until golden and melty.
Allow to rest for 3–5 minutes, then slice into 8 wedges.
