Recipe of the Week: Cottage Cheese Breakfast Sandwich

Sick of having to eat eggs or drink a shake in the morning to get a high protein, low fat breakfast in??

Yeah, me too.

Plus, there's just something about cottage cheese that makes me want to to a happy dance. I love it. My husband loves it. My kids love it.

So if you are a cottage cheese hater, this one isn't for you.

Cottage Cheese Breakfast Sandwich


  • 1 whole Wheat English Muffin (lightly toasted)

  • 1/4 Avocado

  • 1/2 cup Spinach

  • 4 slices Thin Deli Turkey Meat

  • 1/2 cup Cottage Cheese

  • 2 slices fresh Tomato


  1. Lightly toast English Muffin

  2. Assemble each half of muffin with avocado, spinach, turkey, cottage cheese and tomato
