Recipe of the Week: Healthy Banana Ice Cream

Yep. You just read 'healthy' and 'ice cream' in the same sentence.

Can it be true???

Believe me. I doubted it too. I've been using this recipe since college and it's one of my ALL TIME FAVORITE recipes to satisfy my sweet tooth. Especially because I have a soft spot for ice cream.

You guys all know that I am a fan of few ingredients and this recipe....ONLY HAS 2! It's seriously so easy it'll have you wondering how you survived without it all these years.


Healthy Banana Ice Cream

Bananas are hit and miss in our house. I ALWAYS buy them at the store - some weeks we plow through them other weeks they sit on the counter until they become a little too overripe to enjoy. While we are quick to freeze them right away and eventually make banana bread, this ice cream is MUCH healthier, takes a fraction of the time and effort to make.


  • Bananas

  • 2tbs Powdered Peanut Butter (I like to use Coco PB2)


  1. Cut overripe banana into 1/2 inch slices.

  2. Place banana into freezer safe container or bag. Freeze for 2-3 hours.

  3. Mash, blend or puree frozen banana until ice cream consistency.

  4. Mix PB Powder with water as said on directions.

  5. Mix PB Powder with banana

  6. Enjoy!!!
