Welcome to Nebraska where it's snowing and freezing on Sunday then by Tuesday it's nearly 60 degrees and sunny. Oh....and I'll also add that it's back to snow by Saturday **eye roll**
You guys all know how badly I have spring fever right now. Between craving the warmer weather, and getting anxious for the little bundle in my tummy to arrive...May could not come soon enough!!
Now that warmer weather is (sort of) approaching, lets talk about one of my FAVORITE cooking methods: GRILLING!!
Did you know 63% of the population grills monthly, 48% of grill owners fire up the grill year round and 33% use their grill when it's below freezing??
Cooking on the grill tends to lead to less fatty dishes.
Because we use less oils, butter, sauces, etc... when we are preparing the foods. This meaning - fewer calories and less fat in our foods! Not only that BUT our meats are shedding fats while they are grilling. Again, leading to less calories and fewer fat grams!
Grilling also helps preserve more nutrients and helps veggies retain their flavor. It's one of the best cooking methods to help you take advantage of ALL the nutrition that your healthy meal has to offer.

Hawaiian Chicken Kabobs
You are going to love this delicious, flavorful, and simple recipe!
2 cups Pineapple (fresh, cubed)
15oz Chicken Breast
1/2 tsp Garlic Powder
1 tsp Sesame Oil
2 tbs Soy Sauce
In a shallow dish, mix soy sauce, sesame oil, and garlic powder. Stir the chicken pieces and pineapple into the marinade until well coated. Cover and marinate in the refrigerator for 1-2 hours.
Preheat the grill to a medium heat
Thread the chicken and pineapple alternating them onto the skewers. Grill 15-20 minutes, turning occasionally or until chicken juices run clear.
