A snow day in April?? Say whaaaat?
I would love to be posting refreshing summer salad dishes and recipes for grilling...but when you live in the mid-west, you know that even though March 20th was the first day of Spring...Winter still hangs around until May. Yes, we have a snow day today....in April!
So, instead of giving you a grilling recipe when it's not even realistic to grill....I'm sharing my FAVORITE healthy chili recipe this week. Because - when it comes to chili, you can't really go wrong. Your throw in your basic ingredients, chop up your veggies, and let everything simmer until all the flavors have marinated and chili is piping hot.
This recipe is a quick one. I love it. My kids love it. My clients love it. You will love it.
Lean Turkey Chili (serves 5-6)
1/2 tsp Paprika
2 cloves Minced Garlic
1 tsp Cumin
2 tbs Chili Powder
1 cup Diced Onion
1 can Kidney Beans (low sodium)
1 cup Beef Broth
1 chopped medium Bell Pepper
15oz Pinto Beans
1 can Diced Tomatoes (canned)
1lb Lean Ground Turkey or Lean Beef
Salt and Pepper to taste
1) In a medium sauce pan, add ground turkey and start to ground the meat. After a few minutes of cooking add in chopped onion, garlic, bell pepper, salt and pepper. Continue cooking and stirring until meat is cooked through
2) Add can of tomatoes and cans of beans (liquid drained and riced). Add beef broth, spices. Stir together and bring to a simmer.
3) Cover and let simmer 20-30 minutes, uncover, simmer for 10 more minutes.
Optional Toppings: Avocado, Plain Greek Yogurt or Sour Cream, crushed tortilla chips, shredded cheese, jalapenos
*You can find chili ready tomatoes with the other canned tomatoes at the store, and also chili beans (not canned chili) with the other canned beans. They add a great flavor to the chili but so add more sodium. If you are watching your salt intake, go for the plain tomatoes and beans. If you use chili flavored beans, add the whole can including the liquid but if you use regular white or pinto beans, drain and rinse.
